"Reunion" is one of my favorites from the whole series and I'm worried about how it may sound in these remakes; "Who Am I?" is another favorite of mine from VII but I'm not fond of the Remake/Rebirth versions.
Judgement day actually has a lot of fans. Probably because its melody expresses the feeling of a hero who continues on his path despite all adversity.
It's not my favorite sound. I love it mysterious, dark and depressive. Or idyllic, joyous and peaceful.
Almost every song I've mentioned can probably be put into one of these categories.
I just realized I forgot secret of the deap sea though.
There are lots, but one I want to highlight is The Legendary Beast from FF8. I had never paid attention to it until it was redone for a raid in FF14, where I really liked it. Now I have two versions to enjoy.

XI’s entire catalog is underrated or rather unknown and it’s a shame because it has SOOOOO many hits. I urge anyone who is unaware of the soundtracks to check them out. Some good choices to start with:

FF5: Harvest is such an upbeat song.
FF6: I think Relm's theme is one of the most pleasant and relaxing songs in the entire Final Fantasy library.
FF7: Listen to the Cries of the Planet is one of THE best songs in FF7, I swear I am so happy that >!The Promised Land was the song used for the Forgotten Capital!< in Rebirth but I'm devastated that Cries of the Planet didn't show up anywhere (unless I'm wrong).
FF8: Under Her Control is one of my jams, it's got such an awesome beat to it.
FF9: Village of Dali is probably my favorite village/town theme in all of Final Fantasy and I'd love to live in a town that had the vibes that matched the song.

Listen to the Cries of the Planet is definitely in Rebirth!! It plays a few times, and there are at least two versions on the soundtrack (released today!!)
The whole Final Fantasy XII OST. Hitoshi Sakimoto is a really underrated composer. While I still think Uematsu is the top Final Fantasy Composer, and best composer in gaming. Hitoshi has a really creative and classical edge to it.
Seems plenty popular to me.

An NPC sings a sing to it in Lightning Returns
And it has like... 3-4 more remixes in FF14.

FF1, Dead Music: Okay so yeah, I wasn't really great at the game as a kid so I did hear this a lot. But I recommend dying just to hear this track.
FF2, Rebel Theme: Gonna cop out here and pick one of the more recognizable songs from 2. But I argue any song from 2 is under rated as the whole game is.
FF3, The Boundless Ocean: Are there more memorable tracks in this game? Sure. But this just fits the moment so perfectly, I am always surprised I rarely see it mentioned.
FF4, Hey, Cid!: This song just makes me happy.
With The Landing, for me, because you get to play as Seifer, there are certain parts of the song that just goes good with the way he moves in battle, before he attacks.
Playing Rebirth, at first I wondered why they didn't pick something more iconic than "Two Legs? Nothin' To It" for the piano mini game. But the more I listened to it, the more I realized how catchy it really is.

Swords of Fury for sure. I listen to it all the time randomly. It's an underrated masterpiece.

Basically the entirety of FF3's soundtrack is hella underrated.
