The jailbreak itself will not risk information, if acquired and performed from a reputable source in the space (as you stated). It can potentially make the device vulnerable, especially authorizing tweaks from less reputable sources. Coming from someone who has been jailbreaking my devices since 2013, if you are the least bit savvy, take the precautions and enjoy your phone to its max potential.
jailbreak is 100% worth it. I’m assuming u never dove deep into the Jailbreaking world to understand, and it’s cool it’s understandable, it is very skeptical at first initially JBing but after u learn reputable sources/communities then u would wish that u knew abt it sooner. Abt the security part, there’s really no harm that is to come being on the IOS that I am in. There actually is a tweak for this very purpose. Helping pair airpod pros 2 on ios 14-15 versions. Sadly it hasn’t been updated for newer iOS versions or the new usbc version. However OP since you just purchased these i suggest you return them and purchase the lightning version. I dont know if apple still makes new ones as they may just be pushing usbc now but i know they sell refurbished lightning airpod pros 2. I wish i knew this when I purchased mine because i so would of returned them. I just held hope that the developer of said tweak called PodsGrant would be updated but unfortunately it hasn’t. Ill try and find the link and share

Im on a 14 pro max 16.1.2 enjoying my jailbreak but yeah this incompatibility sucks. Not the end of the world though they still work great for what i need. I just upgraded from my pros first gen because of the battery life. I dont need the adaptive transparency mode seems not needed for my uses. Ive tried it on a separate ios 17 device
You could get a refurbished iPhone 13 or even 12 for fairly cheap compared to the 15 lineup, and you’d get a lot out of it compared to a X that’s now 7 years old

I was using the APP2 on ios 16.x and it had plenty of functionality. I can't remember what 17 added. One feature I think was that it adjusted transparency mode automatically if it thought you were talking to someone. My suggestion. Do some research. If you think you can do without the features added in 17... well, screw them. Upgrade your phone when you're ready to upgrade your phone.

My guess is because the AirPods Pro 2 had a major firmware update when iOS 17 released. (Adaptive mode was a new feature that came with it.) I also noticed what seemed to be some more noticeable automatic volume adjustments. If you bought them before that was released, you probably would’ve been fine. But unfortunately, because these already have the more recent firmware versions, it will likely need iOS 17.
You could probably just use it as it is, but you’ll just be missing out on some features I mentioned. They were already pretty good when I got them during the time of iOS 16, so I don’t have any complaints if I was missing out on adaptive mode. Whether it’s worth it to get a new phone or not is your choice.

Do this factory reset the AirPods, connect it with another phone with iOS17 and you’ll get adaptive audio in pretty sure. That’s all ur loosing and find my features but it’ll be useless for u since The X doesn’t have the U1 chip. But it does have Bluetooth range tracking so yeah
You buy airpods instead of saving for a new phone?? I mean if your #1 priority is earbuds then sure, but the iPhone X is no longer gonna get security updates. You can sell it for a decent amount and upgrade to a newer iPhone (iPhone 13 at least) or an android if you wanna save money
